The grapes were handpicked from selected vineyards in the Upper Galilee where they grow on volcanic soil. To achieve a perfect balance, two harvests of the same Roussanne grapes were used - the first, at low sugar content (low alcohol outcome) and relatively high acid that is essential for the wine's tension. Two weeks later, a second harvest brought riper grapes brimming with varietal character and intense aromas. Aging "sur lie" for few month with batonnage to enrich the body, richness and complexity to the wine.
